100% dark chocolate most definitely isn’t chocolate that most people will like due to its intense bitterness. But what most people don’t realise is that with most very bitter bars there’s a great deal of acidity, but it doesn’t mean that all chocolate at the 100% cocoa level is going to be the same. Each very bitter bar may have that acidic characteristic, but there is often a very large variety of accompanying flavours that go with it.
Within the 100% label this means that 100% of the ingredients come from the cocoa bean and not necessarily 100% cocoa solids. So when you look at each bar make sure you know this.
Some people say 100% dark chocolate is good for diabetics as it has ‘no added sugar’ but roasted and unroasted cocoa beans still have a small amount of sugars in them, so you should be aware of this.
