Claudio Corallo is a pedantic chocolate maker based on the equatorial Atlantic island of Sao Tome. It’s his pedantry has a direct impact on the quality of chocolate his small team of chocolate makers produce. He scours the local landscape for cocoa pods that are just the right shade of yellow. He shuns pods that are too dark or too light. His determination to create the finest chocolate doesn't stop with those hours spent clambering through the flora, his staff and hand sort the cocoa beans and remove the slightly bitter germ in the middle to further 'refine' the flavour. I can't remember another chocolate maker that does this, but Claudio's attention to detail certainly does come across in the end product - the most sensational chocolate imaginable.
