Pralus is a chocolate factory in France that imports cocoa beans from all over the world. The owner, Francois Pralus, believes that he can get the best chocolate from making the chocolate himself. He even owns a cocoa plantation in Madagascar where some of the beans used in Pralus’s confections are grown. In addition to Madagascar, Pralus also purchases cocoa beans from plantations in both hemispheres. Their “Single Origine Chocolate” bars all have the same level of cocoa, 75%, allowing chocolate enthusiasts to more evenly compare the flavors of different countries. In addition to chocolate, Pralus is also known for their P, candy-coated Valencia almonds and Piedmont hazelnuts. Pralulines are wonderful by themselves or as an ingredient for one of Pralus’s famous pastries, such as a brioche.
