When chocolate lovers find a chocolate maker that produce 'tree-to-bar' chocolate most go week at the knees. Often we coo over chocolate makers that produce from 'bean-to-bar' chocolate which means that they buy the cocoa beans from the grower or a third party and then produce the chocolate. Companies that are lucky enough to produce chocolate where the cocoa beans are grown have many advantages over bean-to-bar makers and chocolatiers that produce bars using couverture (bought in, ready-made chocolate).
The cocoa beans that the Grenada Chocolate Company use is both certified organic and fairly traded and can hence rightly be called an ethical bar of chocolate. But that's not all, it's also a very clean, fruity bar that is very much a step up in term of bitterness than the
60% and
71% bars they make from the same beans.
