Over the past few years adding cocoa nibs and sea salt has become increasingly popular. Not many, however, have combined the two within the same bar. Those chocolate makers that haven't done this yet certainly don't know what they're missing. The cocoa nibs not only give a fantastic crunch to the texture but an interesting pseudo-sweetness. What sugar there is and what natural sweetness that is present is enhanced by the pinch of local Madagascan Sea Salt. That salt also seems to bring out more of the inherent citrus acidity too which is most welcome. This is certainly a bright bar that that should be enjoyed slowly and without any libation - there's enough fun and excitement in the chocolate itself.
This bar won a bronze in the Best Flavoured Dark Chocolate Bar category of the Academy of Chocolate 2013 awards and two gold stars in the Great Taste Awards.
