100% dark chocolate most definitely isn’t chocolate that most people will like due to its intense bitterness. But what most people don’t realise is that with most very bitter bars there’s a great deal of acidity, but it doesn’t mean that all chocolate at the 100% cocoa level is going to be the same. Each very bitter bar may have that acidic characteristic, but there is often a very large variety of accompanying flavours that go with it.
Within the 100% label this means that 100% of the ingredients come from the cocoa bean and not necessarily 100% cocoa solids. So when you look at each bar make sure you know this.
Some people say 100% dark chocolate is good for diabetics as it has ‘no added sugar’ but roasted and unroasted cocoa beans still have a small amount of sugars in them, so you should be aware of this.
Currently we have the three types of very bitter bar, each are different and should be interesting to compare the three if you ever get the chance. But if you’re still not sure, have a look at our guide about whether people will like very dark chocolate.
