Seventy-two per cent has always been an interesting cocoa per cent level - especially as we're accustomed to 'round' numbers in so many other areas of our lives. Some chocolate makers such as Dick Taylor, Idilio Origins, Mast Brothers pin much of their chocolate to this level, whilst many others explore levels according the particular characteristics of the cocoa bean. 

It's always a difficult thing to characterise any particular cocoa % level and certainly it wouldn't be wise to define 72% in comparison to either 70% or 75% as the beans used and the approach employed by any given chocolate maker would mean that their particular 72% may be milder than the average 70% or more intense than the other 75% chocolate bars we have tried. The best way to find the most suitable chocolate would be to explore the chocolate listed under the more general dark chocolate category and see what takes your fancy.
