When it comes to 90% dark chocolate we start to see a marked prominence of acidity - sometimes this may actually lead to a drier texture - but that doesn't always have to be the case, and certainly isn't with Zotter's 90% chocolate bars. At this per cent of cocoa diabetics should notice that there generally isn't an absence of added sugar. There generally still be added cane sugar and you should take this into account when moderating your chocolate intake.
