Madre continue their trend of making fantastic chocolate with a flora-twist with this smoked salt and pink peppercorn which is a nuisance to gardeners in Hawai'i, was banned by the USA FDA, but adds a simply wonderful aromatic. This aroma somehow manages to combine a light peppery tone with the fruitiness of a Cool Breeze cocktail. You really have to try it to understand that description.
It's the flavour that will captivate many, however. The summer fruits flavour is prominent from the outset and whilst the crunch of the peppercorn is definitely noticeable early on, it’s the salt that seems languid in approach. But to load all the flavour during the initial melt would be to this chocolate's detriment. The notion of a chocolate that takes you on a journey of discovery is worth congratulating; to actually achieve it deserves more. This is a truly fantastic chocolate, even more so as we recognise that the cacao used is fertilised by soils only recently generated from the bowels of the earth.
