Chuao, in recent years, has been the zenith of estates in many people's eyes. That is partly due to the increased variety of makers being able to source and work their magic with the beans. One of those makers is the mercurial Art Pollard and his Amano outfit which is located in Orem, Utah, USA. 

The aroma here is punchy, saline and brutish and a million miles away from the delightfully fruity flavours which you'll witness when you take a bit. The tasting notes below are spot-on. Along with plumb, almonds and coffee I also get a backdrop of molasses. Other bites will give Bakewell tart - it seems to be a different experience every time. And that's what makes this chocolate so enjoyable.
