Its sad that despite being a reasonable producer of cocoa in terms of volume of production, Brazil hasn't really set the chocolate world alight. I met the team at Salon du Chocolat in 2011 and we talked about the role that Frederick Schilling
is playing as partner in the company and tried some samples and ever since then I've been intrigued by the company. Unfortunately, I've found it almost impossible to acquire their chocolate. Thankfully now you can, albeit just the 50% milk bar.
It has been noted that much of AMMA's chocolate has a creamy bias, and this bar certainly keeps to that trend. But that's not to say its devoid of acidity, as a piquancy is most definitely noticeable in the form an under-ripe note. You may also find a dash of red fruit, perhaps cranberry and then a slight undercurrent of walnut.
