Andres and Sabrina, the French-based Venezuelan husband and wife behind Ara have managed a huge feat. Having only been making chocolate for a few short months, they have managed to create a seriously impressive range of bars.
The Trinitario beans in this bar from Soconusco, the southwestern coastal region of the Mexican State of Chiapas. The Organic beans are produce by local farmers who are working together to preserve ecological corridors in the region, tin an effort to maintain biodiversity.
While this isn’t actually an unroasted chocolate, we were amazed at how closely it resembles one. Ana’s Chiapas bar is an intense but chocolatey bar with an excellent depth of flavour. Green notes permeate every layer of this bar and strong tannins emerge at the finish. Tasting much more like an 80%, or even perhaps a 90% chocolate, while this is sure to please those who prefer their chocolate to be intense, and without even a hint of buttery sweetness.
