Shawn Askinosie was a criminal defence lawyer for 20 years before he decided to change from the criminal bar to making chocolate bars.
This handmade white chocolate bar is crafted at every stage by Shawn Askinosie’s team in the USA. One of the founding beliefs of Askinosie’s Chocolate is the importance of sourcing beans directly and in doing so helping local communities across the world. Over the years, Askinosie has garnered much praise for its wonderful Davao dark chocolate bars. And so it seemed only fitting that it select this single estate cacao as the basis for its white chocolate bars. In fact, Askinosie hand crafts this 34% white chocolate from cocoa butter, which it presses itself from cocoa beans sourced directly from farmers in Davao, Philippines.
This butter is then combined with organic cane sugar and (most unusually) goat’s milk powder to create this bean-to-bar white chocolate. While some makers combine roasted cocoa nibs throughout their bar, Askinosie has chosen to scatter them across the back of the bars. In fact, these are the same beans from Davao that are used to make the cocoa butter in the white chocolate. The layering of cocoa nibs on white chocolate provides a pleasing visual contrast.
In terms of the taste, the goats milk ensures that this is a white chocolate bar with a twist. In a world where so many white chocolate bars are overpoweringly sweet, this bar is definitely an exception to that rule. In fact, it has a rather distinctive (almost sour) tang, that most likely won’t suit all palates. The inclusion of cocoa nibs gives the bar a satisfying crunch.
