This is a chocolate for those of you who like to try something a touch unusual. The cacao used here is directly sourced from the Filipino island of Mindanao in the Davao region - where Peter Cruz has his farm. Here we have a 77% bar (76% cocoa liquor and 1% cocoa butter) which offers a dryness consistent with lavender, with a background of lemon peel and just a smidgen of Muscavado sugar. There may be some silkiness there but the creaminess is minimal.
