Belvie Thien Tuy is a dark chocolate bar crafted in Vietnam and also uses single-origin Vietnamese cacao.
In this case, Belvie has made the bare with cacao sourced from Lam Dong Province. Lam Dong is in the Central Highlands of Vietnam, which is the mountainous region towards the center of the country. The province’s climate and fairly mild and therefore allows farmers to grow cacao with a particular range of flavours. While variations in climate affect the cacao’s flavour from year to year, beans from this region have quite a consistent profile.
The dark chocolate has smooth texture and gently buttery melt. We found the cacao had a natural sweetness that came through despite the higher percentage. Hints of raspberry and cranberry add gentle fruit before a sharp burst of citrus.
