This is a stone ground 100% chocolate made by the highly talented chocolate maker Benoît Nihant in Belgium. It exhibits a dry, earthen quality with strident flavours. Beyond that initial intensity lies an almost brandy-like note which is accompanied by pine forest. This is most definitely one of the 100% bars with more bitterness in it, and certainly more striking than the creamy Pralus 100%.
