Even at the 75% level this Ecuadorian cacao chocolate from Bonnat offers heaps of buttery cream - in fact it has to be the richest 75% I've tried since AMMA. But still, this chocolate cleverly keeps some of tannins present to give it a sharp edge that just pushes into a bowl of clotted-cream ice cream sprinkled on the top.
