Bonnat provide a fine example of how chocolate can break a trend for origins. Chocolate made with Madagascan cocoa tends to be very powerful in nature, but this chocolate is fairly heavy on cherry notes and fairly light on the bitterness. There are also decent woody notes that add a layer of acidity, but nothing at all harsh.
