Trinidad has a long tradition with cacao, having given its name to Trinitario beans that were developed and then cultivated on the island and any chocolate connoisseur should realistically get to know as many examples of fine chocolate from this important island as possible.
Bonnat's attention to detail and mastery of the cocoa bean is certainly in evidence with this single origin 75% chocolate. The snap is absolutely perfect whilst the aroma is domineering. It is very much an earthy one that exhibits a lengthy roast. Interestingly, this is continued very much into the flavour profile which also exhibits a prominent cedar-wood characteristic at the finish.
This is an excellent example of what can be accomplished with Trinitario beans.
