The aroma for this chocolate screams "mint" which is surprising giving the fruity background we so expect from Madagascar and the Sambriano Valley in particular. Towards the end of the melt a lumi (similar to lime but with a less fruity character) comes to the fore. Throughout the melt, however, there is a sense of vanilla ice cream with a touch of almond. As you come back to this chocolate it starts to offer more of a soft fruit, perhaps a mango, type bar that offers a mellow, clotted cream flavour profile. Each bite seems to offer something new.
This chocolate serves a wonderful purpose: never presuppose any chocolate, it may be a Madagascar, but this chocolate certainly doesn't conform to the stereotype.
