A dark chocolate bar crafted in Cornwall using cocoa beans from the Sambirano Valley of North West Madagascar.
Mike from the chocolarder has managed to craft a bar with an intriguing texture halfway between smooth and grainy. The result is a bar that is somehow fudgy but still with a clean melt. The dark balances muted intensity with sweeter, creamier notes.
While the red berries typical of Madagascan cacao are there, they don’t burst forth straight away but instead quietly reveal themselves as the chocolate dissolves. There is a tart note, but the flavours are more reminiscent of dried fruits, with a roasted hint on the finish.
