This Chocolat Bonnat Selva Maya bar uses rare cacao from south-eastern Mexico.
The region Selva Maya is an area of tropical rainforest that covers large parts of Belize and Guatemala, as well as crossing the over the border into Mexico. This huge, UNESCO-designated biosphere reserve is the second largest tropical rainforest in the Americas after the Amazon. The incredibly bio-diverse forest is home to a huge number of different flora and fauna from tapirs and jaguars to pumas and scarlet macaws. The unique landscape faces numerous threats from groups including drug cartels and illegal logging.
Growing and harvesting cacao is one sustainable use of the forest’s bounty and so provides income for local farmering communities. Chocolat Bonnat has managed to source these beans thanks to Elisa Montiel-Welti’s tireless work in the region.
The Bonnat family have been making chocolate in Voiron, France for over 130 years. Current head Stephane Bonnat’s parents, Raymond and Nicole Bonnat pioneered Bonnat’s first single origin bars in the 1980’s. Stephane has continued his parent’s tradition and as a result the company works with 35 different plantations worldwide..
