Some of our customers tell us how much they love 100% chocolate because of its intense, brutish flavours. Whilst others may appreciate it for health reasons but find the more acidic flavours uncomfortable. If you fall into that camp then this is no added sugar chocolate for you. It's immensely creamy, more so than the Pralus 100%, but it has a more rural edge to it, almost woodland like - certainly on the nose.
The astringency is limited and it is almost like a 65% but its the cocoa butter that takes the fore here, there just has to be more cocoa butter than mass.
