The Chocolate Tree have taken the success of their Peruvian 50% milk chocolate with coconut blossom sugar and produced a 55% Ecuadorian version. This chocolate is made with Arriba Nacional cacao produced by two brothers from El Ensueño, Ecuador.
When you bring the chocolate to your nose you're 'hit' with the heady coconut scent - the same too when you pop it into your mouth and let it melt. As it does the coconut blossom sugar flavour becomes sharper and your mind will concentrate on that - only for it to subside and the rustic notes of the Arriba come through. Overtime this will also dissipate and you will be left with a 'glow' of true chocolate flavour.
The coconut sugar may, at first be a domineering feature, but it is necessary to encounter if you are to be left with that sweet, soft, delicate milk chocolate flavour.
