As well as posessing many of the green hints you might expect from a raw (i.e., the beans are never roasted or heated above 42 degrees) chocolate, the Madagascan beans in this Madagascar 70% Raw bar a distinctively fruity note. We tasted tropical fruits and green bananas to start with plenty of citrus fruits and a few tart berries towards the finish.
The Chocolate Tree is one of only a handful of companies making chocolate from the bean in the UK and in the short time they’ve been doing it, they’ve produced some of the best chocolate in the world. With a café and shop in Edinburgh and a small kitchen and factory a few miles away, they produce this chocolate in small batches from fine Madagascan cocoa beans.
