This raw chocolate bar uses un-roasted Criollo cocoa beans which have been conched for 60 hours at 45C so they retain most of the natural antioxidants. There's a definite bitterness with this bar - although nothing that people used to chocolate at the 70% to 75% level would be uncomfortable with. There's also a definite sweet edge and mellow undercurrent to the flavour profile that is very much indicative of the Criollo bean used here.
