An intense chocolate made from the Trinitario Cacao Claudio Corallo grows himself in Sao Tome and Prinicpe.
This absolute familiarity gives him an exceptional understanding of the earthy, mossy flavour profile of his beans, and how to draw them out to maximum effect.  The result is quite remarkable.  With one bite, you are transported thousands of miles away to the jungle of Sao Tome & Principe.

The thin pieces of his bitter, earthy chocolate have an unusual texture that is both coarse and soft. The pieces almost bend in your hands, as you take a bite you notice the not quite smooth texture, and as you take a bite the full flavour of Claudio’s beans is revealed.

The rough sugar crystals break up the squares, releasing sudden burst of intense sweetness that contrasts with the woody flavours of his chocolate.

This generous – sized box (equivalent to about two bars of chocolate) is deceptively plain. But don’t be fooled by the unassuming packaging and simple, even rough molding of  the chocolate – Claudio Corallo is perfectionist and craftsman whose chocolate offers a unique, authentic taste of the cacao from this tiny African nation.
