This dark milk chocolate by Damson has been crafted with buffalo milk from Laverstoke park.
The buffalo milk is exceptionally rich and creamy, giving the bar a pleasantly thick mouthfeel and texture. Damson has used the same Brazilian beans as in its dark chocolate. These are from the family owned Fazenda Camboa in Bahia, Brazil. This is the largest organic cocoa farm in Bahia. Owned by two brothers, Fazenda Camboa helps farmers producing high quality cacao get access to international markets and buyers and therefore get premium prices for their cocoa beans.
The beans have a fruity profile, reminiscent of prunes and dark berries. These flavours come through in this dark milk chocolate as they do in Damson’s dark bar, but with a little more sweetness. The strong roasted and coffees notes of the dark chocolate are mellowed by the milk. We detected hints of caramel and fudgy berries in the smooth and buttery bar.
Damson crafts chocolate bars in a small workshop at the back of its Islington shop. While it officially launched at the start of 2015, Damson founder Dom Ramsey has an impressive craft chocolate pedigree. His well-respected chocolate blog (Chocablog) has now celebrated its 10th anniversary. And on top of this, Dom was also a founding team member of Cocoa Runners! We are very excited to have him back with us along with his delicious chocolate.
