A highly distinctive dark milk from Islington-based Damson. Dom Ramsey has carefully chosen and sourced all the ingredients for his bar, from the Laverstoke Park Farm buffalo milk, to the Persian liquorice and Anglesey sea salt. Not forgetting of course his Trinidadian cocoa beans from the Robson Estate. These are the same beans in his 60% dark milk but to a very different effect.
The buffalo milk gives a the bar a smooth texture and creamy mouthfeel. The slight tang from the milk and the hint of sea salt are the perfect compliment to the powerful flavours of the raw Persian liquorice. The fresh grassy and floral notes of the cocoa beans is dominated by the addition of liquorice but still mixes into the bars rich and perfumed aroma.
Damson has crafted an intriguing dark milk: combined, the ingredients give the chocolate and unusual sweet and salty dimension as each release its own distinctive flavour. A bar for the liquorice lover. We would recommend this bar to those who enjoyed Omnom’s Lakkris + Sea Salt bar and for the adventurous chocoholic looking to try something new.
