This Dandelion Ecuador Camino Verde is a 100% dark chocolate bar. Like all 100% cacao, this bar just one ingredient: cacao beans from Ecuador.
This cacao comes from the Camino Verde farm in Guayas Province, Ecuador. Here Vicente Norero has developed his own special way of processing his beans. His experimentation combined with his scientific approach has as a result earned him the name ‘El Profesor on the farm’.
Especially interesting is Vicente’s fermentation. Whereas most people simply ferment the cacao beans in their own pulp Vicente has his own technique. Instead, he removes the pulp from the beans and then adds a specific proportion back in along with specially a special mixture of natural yeast and bacteria.
As a result, Vicente has far more control over the bean fermentation and thus their final profile.
This is an intense, one ingredient 100% cacao bar without any added cocoa butter. The initial aroma mixes strongly roast coffee with some nuttier notes. Tannins and roasted flavours come through as it melts. Notes of fresh soil, are laced with tobacco.
