This is a fabulous 72% bar using the Johe beans (I know I should say seeds) that Friis Holm made famous and Simon and Margie have done an absolutely fabulous job bringing out the coffee (almost like Mellow Birds) and nuts characteristic. But then there are flashes of raisin and wisps of pure and sharp acidity that doesn't blow your head off but takes you to the edge and then back again.
We absolutely love it.
