What a striking bar. This dark chocolate is unlike most others from Panama. The majority of the cacao from Panama is beans of Ecuadorian origin, and the resulting bars have the corresponding earthy flavours. Not so here. Instead, the coastal climate of the region where this cacao is grown give the bar its distinctly fruity character. Our tasting panel was split on the flavour profile of this bar. Some discovered the wonderful richness of strawberries and cream, while others unearthed layer after layer of rich raisins and damsons. The beans take their name from the local port where it is so calm that a ship can be moored by a single hair (cabello)
