Before founding Domori, Gianluca Franzoni spent three years in Venezuela studying different cocoa varieties and working to preserve some of the rarest cocoa beans. This passion for quality beans is the core of Domori’s philosophy.
Unusually for a 100% this is a blend of cocoa rather than a just a single bean. We were surprised as the lack of intensity in this bar, finding it to be much more akin to an 85% cacao chocolate. Acidity and flavour are well balanced with a little sharpness on the finish.
All in all, this is a wonderfully approachable and well rounded 100% cacao bar that has much to offer both those who are new to 100% cocoa chocolate, and those who have long since fallen in love with it.
