This 100% has the driness of the Casa Luker 100% - which is also from Columbia. It leaves your mouth dry and doesn't offer the sharpness of either of the Sambirano nor the Apurimac 100%'s and provides a welcome foil for those flavour profiles that are all too present in other no-added sugar chocolate. That being said, there is much more of an earthiness to this chocolate, it even leans towards a tobacco and lumi profile that makes this one unique.
The other origins of Madagascar and Peru may be held in higher regard than Columbia, but this chocolate certainly has its place and perhaps offers more of an opportunity to work with if you did want to make your own chocolates or experiment with creating your own flavoured hot chocolate - that's what we'll be doing.
