If you wanted to step up the cocoa content from the 72% version of this chocolate and into the 80%-90% region then, but don't be fooled by the % listed on the packaging. This is in no way as intense as any 80% or 85%. As with virtually all of Duffy's chocolate (bar the 100%) this is soft, almost creamy and like being as snug as a bug in a rug.
In terms of flavour you should easily be able to pick out a molasses tone, with a coffee hue too. Duffy's description mentions 'citrus' but that wasn't so evident to me during our tasting session.
