This Peruvian dark chocolate from Fresco is a Limited Edition bar. The bar has been crafted using beans from the 2014 Maranon harvest.
The chocolate’s name ‘229’ refers to the exact steps followed by Rob Anderson when craft the bar. Each of his chocolate is assigned a different number according to roast, origin and conche. In this case, Rob has used a medium roast and long conche to coax out the bean’s flavour.
The bar opens with a noticeable, but not overpowering roasted aroma. The chocolate is has all the characteristics of Fresco. Sweet hazelnuts and cashew give way to bright citrus. The sharp notes build and come to a tart finish.
This bar is part of a very special limited edition run by Fresco. Rob Anderson has taken Maranon beans from the 2015 and 2014 harvests and crafted a range of bars, playing with particular variables such as roast level and conche time.
