This 'signature' chocolate from Bryan Graham at Fruition uses Peruvian cocoa beans that have been slow roasted and stone ground. The flavours present are sweet with strong notes of Bakewell Tart, whilst the vanilla, although detectable, has been kept to a minimum. Although there's no milk present there was certainly a creamy mouth-feel that made it a hugely enjoyable experience.
