We're huge fans of not only the work Bryan Graham does over in Shokan, New York, but also of his chocolate. For an unassuming man he creates damn fine chocolate. This bar is a Good Food Awards Gold Seal 2013 winner and it’s understandable why.
Some may cry at the thought of adding vanilla to this hand-crafted Peruvian cocoa, but I feel it does it justice as it not only bounces off those rustic flavours but also adds a contrast to the sea salt and supports the milk well.
Much other Fleur de Sel chocolate accompanies brutish dark flavours, as the Mast Brothers does, but here the addition of milk certainly softens the experience and, to my mind, makes it a much more enjoyable chocolate.
