A dark milk chocolate crafted from Guatemalan cacao. The trinitario cacao for this bar has been sourced from the Cooperative Fedecovera Q’Eqchi Mayas farmers.
Georgia Ramon is a great believer in the importance of transparency. As such, Georg and Ramona disclose details of the roast, conche and grind times on each of their bars.
The cacao for this bar has undergone a medium roast, followed by a 72 hour grind. It has not been conched. This leads to a bar that is slightly grainy in texture, but still bursting with flavour. We found this bar to be lightly spicy, with hints of cardamon and a malted, biscuit like quality.
