The bar is crafted by Islands Chocolate in their factory in Kingston, St Vincent. St Vincent Cocoa Company is a family owed cocoa company that employs around 250 people, working with over 100 farmers and is dedicated to growing fine flavoured cacao in a sustainable way and creating opportunities for locals. St Vincent Cocoa Company launched in 2014 and is passionate about sustainable, great tasting chocolate. Their work is given poignancy and meaning given that St Vincent is the 10th poorest country in the world. Consequently the local islanders are delighted to have a product that is being produced on the island
For this 85% dark bar, Islands Chocolate source the beans from Perseverance Estate. Perseverance estate is farmed by Harvey Butler who obtained 3.5 acres of cocoa tree in the 1970s. Harvey’s land has a mixture of mature trees that were planted in the 1970s and younger trees that he planted in 2011. Harvey plants ginger alongside his cocoa trees to give him an additional source of income. He also has secured organic certification for his cocoa.
For an 85% bar, this chocolate is surprisingly light. It has an almost “chewy” mouthfeel that is rich and indulgent. We found some subtle hints of stone fruit, walnuts and even coffee
