The chocolate has been crafted using cocoa beans sourced from Xoco, an organisation that works directly with farmers in Honduras. The beans are called ‘Mayan Red’ because of the cacao pods distinctive crimson colouring. This particular genetic strain is unique to Honduras. The original ‘mother trees’ were discovered in the country’s northern coastal jungle, and according to legend they date back to the Mayans themselves.
Jordi’s Chocolate Library is ever expanding, including everything from Matcha white chocolate, to Goat’s milk chocolate. The single origin bars are more of a classic approach to chocolate, however the complexity of the flavour profiles never fail to disappoint!
