Often when you try dark chocolate with sea salt the added ingredient dominates the chocolate, but with this Latvian version the two main ingredients battle it out in a death match ... and the winner is the cacao. The sea salt gets the cacao on the ropes at the start but fades and finally succumbs to the talent and bitterness of the cacao. It does finish with a flourish with an usual, floral right-hook that belies description. Hopefully someone who tries this chocolate could help me out with explaining what it is.
