The Puentespinas hail from Malagos farms, situatedgrown in the foothills of Mt. Talomo, Davao in the southern Philippines. Rex, along with his mother Charita, started making chocolate over a decade ago in 2003 when they took over some nearby land that had cacao trees.
They started by making “tablea” the traditional way— sun drying the beans, then roasting them using firewood, grinding the roasted beans using a fabricated grinder, and moulding them into round tablets. Thanks to international support they’ve gradually upgraded their facilities and processes – and are now making this Malagos 65% Dark Chocolate from the same single-origin, premium quality Trinitario beans.
The flavour of this bar really evolves. It starts as being very smooth, you can then find highlights of a little added local vanilla, and a real depth of dried fruit and nutmeg flavours come through.
