The first bar in our Chocolate Library crafted in and using cacao from Hawaii.
We found this to be a sweet and gently earthy dark chocolate. The bar has a slow, slightly chewy melt that gradually unveils refreshing green notes that mix hints of sugar snap and cut grass. As light layers of flavour are release, delicate aromas of daisies and fresh thyme leaves dissolve into fresh coconut. The coconut takes on a creamier quality, creating an aromatic ganache finish.
Chocolate is being crafted in ever more locations across the United States, but Hawaii is the only US state where cacao is also grown. Manoa founders c craft their bars in Kailua on Oahu island.
The pair buy the beans for their Hawaiian bars from local farmers in Hamakua, Waiahole, Maunawili and Haiku. This dark is specifically crafted using cocoa beans grown in the Hilo region of Hawai’i Island (Big Island).
