Based in the heart of Sweden, Metiisto is one of the most recent makers we have welcomed to Cocoa Runners. Its attention to detail sees it carry out each of the chocolate making processes by hand – from sorting the cocoa to hand wrapping each and every chocolate – often taking months from bean to bar. We think its dedication to the process can be tasted in each bar.
Sourced from the Sambirano plantation in the north west of Madagascar, Metiisto has crafted a bar at the citrus end of the fruity Madagascan scale. Slow roasted at a low temperature to keep its flavour, and refined and conched to produce a silky texture, this bold chocolate has both citrus and earthy tones, and replicates flavours of raisin and red fruits.
