Montecristi’s mission is to create chocolate with fine flavour cacao beans and which has a human story. Co-founder Susana Cardenas wants those who taste its bars to understand the story of its origin. She is also driven by a goal to give each customer a picture of the people who work so hard to produce such fine cacao beans.
The cacao for this bar comes from the coastal region of Manabí, Ecuador. This bar is made exclusively from only the finest Arriba Cacao.
Legend has it that a Swiss chocolatier in the 19th century, while navigating along the Guayas River, encountered men bringing down freshly harvested cacao. Upon smelling it, he asked where it came from, and they responded “de rio arriba” or upriver. Since then, this variety of fine aroma cacao has been known as Arriba. Today, this cacao is highly prized, and this ‘Arriba’ label is still used to describe cacao grown within this particular region of Ecuador.
The aroma of this bar is quite deceptive. As you inhale the chocolate, you are met with a wave of spice. While you might expect this to develop into a peppery spice on the palate, the flavour develops in quite a different direction. Instead of a punchy spice, the chocolate develops a rich molasses like quality, with just a hint of warmth coming though in its cinnamon finish.
This bar won a Bronze Award at the 2016 Academy of Chocolate Awards.
