Puerto Cabello and the region of Carabobo is a particular favourite area of mine that gives rise to a combination of earthy and woody aromas and a distinct toasted nut flavour. Morin states that the beans used to make this chocolate have a heritage of a blend of Trinitario and Criollo - with more of the later prominent.
