When chocolate as we know it today was first consumed as a beverage in Mesoamerica sometime around 500 CE, it had spices and herbs added to balance the natural acidity contained within the cocoa bean. Although most chocolate aficionados prefer unflavoured chocolate (especially without vanilla), we still do appreciate chocolate that has interesting flavours that are in tune with the inherent beauty of the cocoa bean. And that's what Naive has done with this Orange and Cinnamon bar.
The cocoa liquor has had a fairly short conche time of 19 hours, but the starkness of the bean has been controlled by having a much lower cocoa solids content at only 63% and using the cane sugar, cinnamon and orange oil to give it more of a sweet, interesting and warm flavour.
