Traditionally Pacari has produced raw chocolate from Arribia Nactional beans sourced from Ecuador. What we have here, however, is a chocolate still made with Nacional beans but sourced from the Peruvian region of Piura in the north west of the country.
The aroma has a very earthy, almost green, woodland edge whilst the mouth feel and melt is exemplary and lengthy. The scene that the nose offers is most certainly continued with the flavour. The acidity is base and direct but not one-dimensional. There are caramel and sweet hues available to distract. The over-riding feeling this chocolate gives, however, is one of purity and far less creamy than much of the Pralus selection.
