This dark chocolate is made with just two ingredients: cacao beans and a little sugar. Palette de Bine used Belizean cacao to craft this bar at its workshop in Mont-Tremblant, Québec.
Mayan Mountain works with over 300 farmers in the Toledo district of Belize. Its mission is to improve the livelihoods of farmers by connecting them to craft chocolate makers. Maya Mountain buys ‘wet’ cacao beans from farmers at above market price. It then takes the beans to ferment and dry and its own facility. This simplifies the farmers’ job and also means that Maya Mountain has full control of post-harvest techniques and can ensure consistently high quality.
Lots of cinnamon and mixed spice on the nose with. The spicy aroma doesn’t translate into the bar, however. We noted a little touch of smoke some fruit with plenty of lemon that continues into a lingering aftertast.
